WINEMAKER'S NOTES Wild fermentation started slow and then took a year to finish. Entire time was spent in stainless steel to preserve freshness.  

SOMMELIER'S NOTES  The nose is ripe golden delicious apples, bees wax, honey and butterscotch. The palate is rich with a welcome acidity for relief. The flavours are long and finish fresh. Have for dessert with baked brie. No fruit or preserves required.
