WINEMAKER'S NOTES Wild fermentation started slow and then took a year to finish. Entire time was spent in stainless steel to preserve freshness.  

SOMMELIER'S NOTES  A pretty dessert and verstaile dessert wine. The nose reminds me of yellow things like sygar pear, banana, quince, and honey. The palate is rich with a welcome acidity for relief. The flavours are long and finish fresh. Have for dessert with baked brie. No fruit or preserves required.
