WINEMAKER'S NOTES This is from the Knotty Vines Vineyard site on the St. David’s Bench. It was a hot year, but the fruit kept its acidity. There was plenty of vine shutdown, so we left it on the vine a little later and the fruit had a chance to develop. I love the acidity on this Riesling. Some botrytis in the fruit. We pressed whole cluster, and after a 48-hour settle, we racked the wine and let it ferment in stainless steel. Primary fermentation took 7 months, and the malo did not complete.

SOMMELIER'S NOTES This has the intensity and richness of icewine, complexity of botrytis, and freshness of Riesling. Honey, beeswax, sugar pear and white flower notes with a hint of button mushroom. The wine is sweet, but finishes fresh and stays with you. Have with Pâté or terrine, or Japanese cheesecake.
