WINEMAKER'S NOTES Initiating with a 20-day carbonic fermentation in stainless steel, we then progressed to destemming and subsequent maceration in French oak vats. The fermentation phase extended variably from three weeks up to five months, ensuring depth and complexity. Finally, the wine was aged for 30 months in new 225L Moldovan oak barrels, perfecting its finish.
SOMMELIER'S NOTES The current release of Black is exceptionally concentrated, showcasing a profound, dark profile. The aroma is rich, blending black fruits with hints of tar, dark chocolate, a touch of toasted cinnamon, and leather. The palate is equally intense, mirroring these flavors with an impressive depth and power. This wine complements a well-prepared porterhouse steak, akin to the quality you'd expect from a premier steakhouse.
