WINEMAKER’S NOTES Carbonic fermentation was done in stainless steel for 20 days. After, we bled the must, destemmed, and married the fermenting juice with skins for another 10 days of maceration. After maceration we pressed into 2 and 3-year-old French barrels for 11 months.
SOMMELIER’S NOTES This is Pinot Noir proper, dancing between the old world and new. Ripe cherry, cranberry, and roasted beet notes with the slightest bit of vanilla in the background. The palate is dry, the tannins are grippy, and the acid holds the flavour for a long time. A lot fresher on the palate than the nose. Tasty stuff from the 2020 vintage (JL-Aug 2022)
