WINEMAKER’S NOTES We dried the grapes gently for 4 weeks to lignify the stems. After, the grapes were covered with carbon dioxide in whole bunches for 3 weeks (carbon- ic fermentation). Then, we destemmed and combined with skins for another 2 weeks. The must was pressed into new Moldovan barrels for 22 months, where alcoholic fermentation took 12.

SOMMELIER’S NOTES An intense nose of ripe blackberry, black cherry, peppercorn, and oak. There is a smokiness to this wine that is quite pleasant – it reminds you of Syrah. The palate is dry, rich and the tannins are fairly grippy both from oak and from grape. The flavour is super long, and the oak finish is welcome for this style. (Aug. 2022-JL)
