Winemaker’s Notes: We dried the grapes in kilns for three weeks before undergoing carbonic fermentation in a 6000L concrete fermenter for one week. Fermentation was both carbonic and ambient, with alcohol fermentation completing after five weeks. The wine was then aged for 18 months in 225L French and Moldovan oak barrels before bottling.
Sommelier’s Notes: The wine shows its Cabernet Franc variety with clarity and depth. Ripe and slightly stewed red fruit—cherry, raspberry, and strawberry—meld with a floral habanero tone, true to the Franc. The nose finishes with vanilla and cardamom, adding warmth and complexity. The palate is dry and layered, with grippy tannins and well-integrated alcohol, revealing more red fruit, black cherry, and a juicy yet slightly leathery texture with pipe tobacco undertones. Decant before serving and use a large glass to let it open up. Best enjoyed with ribeye or striploin topped with chimichurri, where the vibrant acidity and tannins cut through the richness.
