WINEMAKER’S NOTES The fruit came from south facing slopes, which get much more ripeness than other sites in Niagara. We picked twice, earlier for our sparkling wine (ETA 2022) and the second time for this. We only dried 20% of the fruit for a couple weeks. I like a fuller Pinot Just like the Chardonnay, it had more concentration so we left it in barrel much longer. 21 months in 1 year old cigar barrels. A much cooler vintage than previous so the Pinot had a higher acidity and more development.”

SOMMELIER’S NOTES Red fruit, Swiss herb candy, mushroom, beets. We have been waiting for this Pinot. A winter time example with plenty of depth and power. Still has a softer tannin profile and a bright acidity that lets you know this is Pinot. Length for days. Grab a giant Dutch oven, sweat a couple sliced onions, add a couple jars of sauerkraut, every meat and sausage you can find, a couple bay leaves, and bake. You’re welcome.
