WINEMAKER'S NOTES The vintage was dry and low in humidity yielding smaller and more concentrated berries. After 7 days of carbonic maceration, we pressed into 1000L 3-year-old Slovenian oak vats. Ambient fermentation and malolactic conversion took around 4 months, then we transferred 50% to new 225L Moldovan oak barrels for an additional 6 months of maturation, while the rest stayed in the vats. We combined both lots before bottling.
SOMMELIER'S NOTES This is a very pleasing and easy to drink example of Chardonnay. The nose shows the baking spice of oak aging, but it is supported by fruit and non-fruit aromas. Ripe golden delicious apple, pear, and white peach with wafer and button mushroom. The palate is dry, fresh (acid), yet ripe, and long. I don’t need anything to enjoy this wine, but I am craving a classic beer-battered fish and chips with pickley tartar sauce. June 27th, 2022, J.L.
