Winemaker’s Notes: All the varieties were vinified using carbonic fermentation. The Malbec, Merlot and Syrah were dried for a short period of time to lignify (brown) the stems. Merlot we used for body and structure. The Syrah, Malbec and Cabernet Franc were used for aroma and flavour. We bottled this unfiltered after 20 months of aging in concrete.
Sommelier’s Notes: There is so much going on with the nose that I am having trouble wrapping my brain around it. Red, blue and purple are the colours I am smelling (synesthesia) with some phantom spice from the non-oak. The palate is dry and has significant weight. The tannins are tight, so this needs a little time in bottle or decanter (hours). Serve with red meat or dark chocolate to take the grip off.
